Choosing your seed varieties is part of the fun! Each microgreen variety has its own character, with distinct flavours, textures, and growing processes. So where should you start? Here are our three top recommendations.

If you're new to microgreens we recommend you start with something quick and easy, like broccoli. It can be harvested around 8 days after sowing (yes, really!), it's a very reliable grower and not too fussy about temperature, humidity, or watering. It's relatively mild in flavour too, so a great one to use as a garnish to add flair and nutrients to your dinner without overpowering the other flavours in the dish.

If that doesn't excite you and you'd prefer something sweeter, have a go at pea shoots. It's also pretty easy to grow but takes a little longer - around 1.5-2 weeks depending on a few factors like temperature and light. You will need to soak the pea seeds for a few hours before sowing, just sitting them in a cup of water overnight is perfect. They taste sweet, just like the peas they came from, and they develop beautiful curly tendrils which look stunning while they're growing on your windowsill, and just as stunning once harvested and plated up.

A third contender for a first variety is if you wanted something with a bit more of a kick, then radish is a really fun one. It's quite a tall, fast growing one, it takes around 8-10 days from sowing to harvest, and produces colourful, juicy, spicy stems and pretty little leaves.
